it’s getting hotter and hotter outside and i love light and fruity food. so i created my own little blueberry rice crackers.
for 1 piece you need:
- 1 tbs mascarpone (i chose light 21 % fat)
- a little bit of powdered sugar and some milk
- 3 blueberries
- 1 rice cracker (apple-raspberry-blueberry flavour)
- lemon balm to garnish
mix a little bit of powdered sugar with mascarpone and add some milk if needed to get a creamy mixture.
put 1 tbs of it on a rice cracker and decorate with 3 blueberries and some leaves of lemon balm.
i found these flavoured rice crackers at “hofer” in austria and i hope they’ll stay in the sortiment for a while, cause i really like their lightly sweet taste. they are gluten-free and have a beautiful colour as well. :)
